Vegan Recipe: When a Burrito and a Fajita Fall in Love

I had a hankering for some vegan fajitas last night. I started chopping and sauteing the veggies (which was already a failure as fajitas should have some grill action) and then I spotted black beans...then brown rice. Then end result was the love child of a burrito and a fajita and it was good!


  • 1/2 onion, thinly sliced
  • A couple tablespoons of olive oil for splashing
  • 3 cloves crushed garlic
  • 1 red pepper, seeded and sliced
  • 1 green pepper, seeded and sliced
  • 1 zucchini, sliced in half and then into half moons
  • 1 yellow squashed, sliced in half and then into half moons
  • 1/2 c. sliced mushroom
  • 1 1/2 tsp. ground cumin
  • 1/4 tsp. chili powder
  • splash of soy sauce
For the beans
  • 1 can black beans, excess juices drained
  • 1/2 tsp. ground cumin
  • 1 clove crushed garlic
Other elements
  • Brown rice, cooked
  •  warmed tortillas
  • vegan guacamole
  • sliced avocado, lettuce, tomato...or whatever looks good

  1. First start cooking your brown rice. Once done remove from heat and place in a serving bowl.
  2. Meanwhile, in a large skillet splash a bit of olive oil and warm over medium high. Add the onions and cook until they start to become translucent.  
  3. In a large bowl toss all of the other ingredients together with a splash of olive oil, making sure the cumin and chili powder are evenly distributed. Put in the skillet and heat until everything cooks but still retains just a bit of a bite. Add more olive oil if needed. Remove from heat and place in a serving bowl.
  4. While all of this is going on toss your beans, garlic and cumin into a pot and heat over low, stirring occasionally. Put in serving dish right when you are ready to eat.
  5. Warm the tortillas and place out the guacamole and any other add-ons.
  6.  Let each person assemble to their liking. Beans, rice, veggies, toppings. YUM!

oh it looks so good! if only i could convince my kids that it is good! they'd probably eat some of it... i think i'm going to have to try... i have so many peppers right now and I always like mexican flavors!
