This is a quick and easy breakfast sandwich, recipe moved over from Rooted Vegan.
I don't know about you, but I have noticed that there is very
little middle ground in the breakfast sphere: either it is super fast
and easy ( cereal, bagel, fruit, etc.) or it takes like an hour to make
(pancakes, french toast, vegan quiche, etc.). I am often in the mood for
something in between a little savory a little sweet and in the 15
minute prep realm.
Enter the vegan breakfast sandwich!
My family has invented and reinvented this sandwich over the years in
many different incarnations. Here is our most recent go-to.
4 vegan English muffins, sliced through the middle
4-6 slices of vegan bacon, cooked until crisp
4-6 slices of vegan cheese that melts (I used Daiya)
1 crisp green apple, thinly sliced
1. Preheat your oven to 350 F.
On a baking sheet assemble your breakfast sandwiches. Bottom of muffin,
apple slices, vegan bacon, vegan cheese, muffin top (he he).
3. Place the assembled sandwiches into the oven (on the baking sheet) and bake for 10 minutes or until the vegan cheese melts.
