I am absolutely in love with artichoke dip. I mean who isn't?
These are a personal take on traditional artichoke dip. They are super simple and fast to make.
You will need:
24 mini phyllo (or fillo) cups (easily found in the freezer section, most are vegan)
12 oz jar of marinated artichoke hearts, drained
1/2 c of vegan parmesan
1/3 c vegan mayo of your choosing
1/3 c vegan cream cheese
1/3 c chopped frozen spinach, thawed
juice and zest from half a lemon
1 clove garlic
1/4 tsp salt
*Optional garnish, itty bittty lemon slices
1. Preheat oven to 350F. Set the phyllo cups on a cookie sheet.
2. Put everything else into a food processor and process until creamy.
3. Fill the phyllo cups with the mixture.
4. Bake for 8 minutes.
