A lot of you know that Eric and I are vegans and have been so for nearly a decade. Being vegan means that we do not eat, use or wear any products that come from or were tested on animals. I get a lot of questions about my diet and just how I meet all of my nutritional needs. I thought I would give you a week of examples of just what we eat. Also, if you have any specific questions (for example:what do we use instead of eggs while baking? how do we get our protein/calcium/etc.) just ask them in the comment box or send me an email and I will try and answer it the following day.
I should also mention that I am eating slightly more than normal as I am obviously trying to gain some pregnancy weight and my nutritional demands are a bit higher.

I am a big fan of breakfast. I never skip it, even when I am in a big rush. Honestly I would rather go out without a shower than breakfast; thankfully advance planning keeps this from turning into a problem. This particular breakfast consists of cereal (there are tons of vegan cereals) with soy milk, a muffin made by my Mom, some mixed berries and a glass of orange juice. Eric had coffee, but I am skipping all caffeine while pregnant.
For lunch I made a sandwich with baked tofu, avocado, olives, pickles and some other veggies I am forgetting. I also had some fresh cantaloupe and multi-grain chips. Washing it all down with a tall glass of lemon water.
I absolutely love pink lemonade. I think it is my official summer drink of choice. After getting a little too hot with all of my weeding in the garden I decided to cool down with a glass of my pink nectar of life.
Late afternoon I made some dough for dinner. I love having a little extra time to make my own dough. The bread machine is great, but I really enjoy making it myself too.
Dinner was cabbage burgers. I make a whole grain roll and inside I bake cabbage, onion, ground meatless and season it with some freshly ground black pepper. I paired it with a fresh green salad. Delicious and filling.

You are so nice the way you put that. I get kind of pissy when people "demand" to know how I can be a vegetarian and pregnant, like it's abuse to the child to be to not be stuffing cow carcass in it's umbilical cord! And way to go you, I only lasted a week on the vegan thing, too in love with cheese. We do at least try to get free-roaming, as friendly to cows as possible products but I confess Taco Bell is my nemesis.
Looks delicious! My husband has reduced using meat since we met but he still wants it every now and then. But I've adviced him to buy organic meat and beef because cattle is better treated than pigs and chickens in general. We also give some organic meat to the child.
But I know a balanced and complete vegan diet is possible. I used to eat only raw food myself and I've never felt better! But it was too difficult.
It all looks delicious! Here is a question for you: What company makes the soy cheese that you use, and does it have casein in it? I have a hard time finding dairy free cheese for my hubby that actually tastes good! My next question is, which soy milk do you use? We use So Good, but I'm always curious about others. Thanks!
I think it all looks delicious! Even though we eat meat, I grew up with veggie-loving parents and we had many meatless meals throughout each week. It's something we still do. The cabbage burgers look delicious-- you may have to post recipes. =)

And yes, I do wonder how you bake without eggs :) I think the more explaination you give the better, because some of us (me) know nothing about vegan lifestyles...but are curious about the whys/hows.

Wow- That all looks so scrumptious and nutritious, I eagerly await a cookbook from you :) I have recently fallen in love with vegan baking. Mmmm. I make these awesome carob chip cookies!! I have been learning a lot about nutrition in school and I was wondering if you have to take any supplements at all. I know Vitamin B12 is mostly in animal product. Just curious. I strive to be vegan one day too, but I do love cheese.
