Here's my recipe (it regularly changes):
- Preheat oven to 375 F.
- Combine 2 1/4 c. of flour, 1 tsp. baking soda, 1/2 tsp. salt. Set aside.
- In a separate bowl combine 3tsp. EnerG Egg replacer + 4 Tbs. warm water, 1 c. softened vegan margarine, 3/4 c. sugar, 3/4 c. brown sugar, 2 tsp. vanilla extract.
- Combine the wet and dry ingredients and mix thoroughly. Add 1 c. of vegan chocolate chips, 1/2 c. of nuts or coconut flakes are great too. Mix it until integrated.
- Drop by rounded spoonful onto cookie sheet and bake for about 10 minutes or until they begin to brown. Enjoy with a cup of soy or almond milk.
