Recipe: Vegan Breakfast Scramble

Many people have a particular vision of what a vegan breakfast might be (lettuce and water), but I assure you we never run out of options! We eat cinnamon rolls, bagels, cereals, breakfast burritos, muffins, fruits, etc. One of my favorites is a vegan version of the old familiar scrambled egg breakfast, this version is so yummy and much healthier.

Ingredients:
  • 1 package of firm or extra firm tofu, drained of water (not silken tofu---it will say silken on the box if this is your 1 st time buying tofu).
  • pinch of turmeric (1/4 tsp.)
  • pinch of garlic powder (1/4-1/2 tsp.) or a clove of garlic
  • veggies to your liking. Today I used sun dried tomatoes, artichoke hearts, mushrooms, olives, and pineapple. I use this as an opportunity to clear out leftover veggies in my fridge.
  • 1/4 c. Dayia shredded vegan cheese (optional)
  • 1/4 c. Nutritional yeast (optional)
  • 1 half of an avocado (optional)
In a non-stick skillet over medium high heat crumble the whole block of tofu. Add the turmeric and mix, the turmeric will spread through the tofu, turning it yellow. If you are adding Nutritional yeast do do now. Mix. Add garlic powder, Daiya, veggies. Cook until the excess liquid of the tofu has evaporated. It will look a lot like scrambled eggs, only way more awesome. Top with sliced avocado. Serve hot with toast or wrap it in a tortilla for a breakfast burrito on the go.

Wow, the pineapple is a surprise! This looks delicious. I love scrambles and frattatas, such a great way to use fall veggies.
