Vegan Recipe: Breakfast Scramble

I love a good breakfast scramble. Something about it just hits the spot. My recipe is ever changing with the availability of ingredients in my pantry/fridge.

Ingredients
  •  1 Tbs. olive oil
  • 1/2 1 c. mixed veggies---zucchini, mushroom, pepper, olives,onions, corn, potato, etc.
  • 1 clove garlic, minced
  • 1/4 c. salsa
  • 1 package of firm or extra firm tofu, crumbled
  • 1/4 tsp. ground turmeric
  • 1/4 c. nutritional yeast
  • 1/4 c. Daiya shredded vegan cheese
  • Optional: vegan sour cream, sliced green onion
Directions
In a medium skillet over medium high heat, warm the oil. Sautee the veggies ( starting with longer cooking veggies like onion and pepper then adding the rest). Add the garlic and salsa, mix. Add the tofu, nutritional yeast, turmeric, vegan cheese-combine. Cook, stirring occasionally, until the tofu just starts to brown. Serve hot with a dollop of vegan sour cream and some green onion.
